Fresh + Easy Summer Salads
We’re enjoying all the seasonal and fresh ingredients this summer but our usual healthy diet can sometimes shift during this time with eating out more, going on a vacation or just hanging out at the beach all day and wanting something easy to make that night. We’ve listed 3 easy and fresh (and kid-friendly) salads you can have on their own, as a main meal or to pack up for a BBQ celebration. These require no cooking at all!
Superfood Salad
One of our personal go-to’s! Throw together whatever you have in your fridge and whip it all together in under 20 minutes! (for 4)
1 cup of Quinoa
2-3 chopped Dates
1-2 Corn on the Cob (cooked and cut)
1 cup of Greens (kale, arugula or romain lettuce)
1 chopped Apple
1/2 cup of Protein (Tofu, Beans or Chicken)
1/2 can of Chickpeas
Dressing:
1 tbsp Olive Oil
2 tbsp Lemon
1/2 tsp Apple Cider Vinegar
Lemon Zest
Salt/Pepper
Fresh Watermelon + Feta Salad
We love this salad for a fresh take without the typical vegetables or greens and you get your boost of hydration and vitamins in!
1 whole diced watermelon
1/2 cup chopped fresh mint
1 cup crumbled Macedonian feta
Dressing:
2 limes juiced
1/4 cup olive oil
salt/pepper
For fun you can soak walnuts overnight and add it for a nice texture.
Shirazi Salad
A light and easy Persian salad which is perfect to pair with grilled fish or chicken and quinoa or rice or a delicious traditional Persian dish!
3-4 chopped finely tomatoes
3 chopped finely Persian or English cucumbers peeled and seeded
1/2 chopped red onion
1 tbsp Dried mint
4 tbsp lemon juice
Salt/Pepper
*Tip: Mix all together and leave in the fridge for up to 1 hour before serving.
